Stuffed Maple Ricotta Brioche French Toast

  • Fruit (strawberries or pineapple) 
  • Maple sugar to taste
  • Ricotta Cheese, 2 tbsp per person
  • 2 eggs
  • 1/4 c. oat milk
  • 1 tbsp. dark maple syrup 
  • 1/2 tsp. orange extract
  • 1 tbsp. cardamom 
  • 1 tbsp. cinnamon 
  • 1/2 tsp. salt 
  • Stale brioche slices, 2 slices per person 
  • Smart balance


Slice up fruit and put in a bowl. Sprinkle with maple sugar and set aside. Mix together eggs, milk, maple syrup, orange extract, cardamom, cinnamon, and salt. Mix together ricotta and maple sugar. Spread between two slices, then pinch edges of bread together slightly to seal. Heat a pan over medium heat and throw in a little Smart Balance or butter to prevent sticking. Dip the stuffed bread in the egg mixture and flip to soak both sides, then put into the hot pan to cook, flipping once, until both sides are golden-brown. Plate the french toast and put the sweetened fruit on top. Enjoy!
