2 cups flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons pumpkin pie spice mix
1/2 teaspoon salt
1 3/4 cups milk (almond works if vegan)
1 cup pumpkin (not pumpkin pie mix)
1 large egg (can leave out if vegan, will have a denser pancake)
2 tablespoons vegetable oil
In a bowl, mix flour, brown sugar, baking powder, baking soda, pumpkin spice mix, and salt.
In another bowl, mix milk, pumpkin puree, egg, and oil.
While stirring, slowly add dry mixture into the wet mixture until fully mixed. You shouldn't have any lumps.
Lightly spray hot skillet or griddle with non-stick cooking spray or lightly brush with melted butter. Use a large dinner spoon to create pancakes the size of a silver dollar.
When bubbles start to appear on pancake, turn over and flip. Cook for an additional 2 minutes.
Spread maple spread on while pancakes are still hot for it to "melt". We recommend using our cinnamon maple spread!
