Maple Pearl Sugar Waffles


  • 1 packet of dry yeast (7g, 1/4oz)
  • 1/3 cup lukewarm water
  • 1 1/2 tbsp maple sugar
  • 1/4 tsp kosher salt
  • 2 cups flour
  • 3 eggs
  • 1 cup unsalted butter, softened (or Smart Balance)
  • 1 cup of maple pearl sugar or broken up maple candy


Use a stand mixer or hand mixer with appropriate dough hook. Mix the yeast, water, sugar and salt together in the bowl and set aside for about 15 minutes to let the mixture gets foamy. Mix the flour into the liquid using a low speed. Add the eggs, one at a time, then add the butter, 2 tablespoons at a time. When finished, the dough will look like thick cake batter. Cover the bowl with plastic wrap and refrigerate overnight. In the morning, take out the dough to room temperature, then mix in the maple pearl sugar. Heat up waffle iron and scoop about 1/3 cup of dough at a time. Cook about 5 minutes until golden brown and enjoy some buttery maple-y waffles. If you somehow don’t eat them all, wrap individually in foil and freeze. Reheat in a toaster for best results.
