These fun cupcakes will take you to cloud nine for your next party! Featuring pumpkin cupcakes, maple cream cheese frosting, and a maple cotton candy cloud, these mini-treats are sure to be a hit at your next party.
Mini pumpkin cupcakes:
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 and 1/2 teaspoons pumpkin pie spice
1/2 cup canola or vegetable oil. Can also use 1/2 cup applesauce for a denser cupcake
2 large eggs
3/4 cup packed light or dark brown sugar
1 cup canned pumpkin puree
1 teaspoon pure vanilla extract
Preheat the oven to 350°F (177°C). Line a 30 cup mini muffin pan with liners.
Whisk the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice together. Whisk oil, eggs, brown sugar, pumpkin, and vanilla extract together until combined. Pour the wet ingredients into the dry ingredients and mix until completely combined.
Spoon batter into the liners; bake for about 12-13 minutes. Allow the cupcakes to cool completely before frosting. Frost with cream cheese and maple frosting and refrigerate. Before serving, place a small amount of cotton candy on the top to bring these cupcakes to cloud nine!
