Our friends Joan and Kyle at Field Notes NYhave been experimenting with savory maple dishes. Kyle suggest pairing this aioli with roasted root vegetables or on a sandwich.
3 whole cloves of garlic
3 tablespoons very dark maple syrup
1 tablespoon white vinegar
2 teaspoons of hot sauce
3 1/2 cups vegetable oil
Pinch of salt
Combine garlic, maple syrup, vinegar, hot sauce and salt and blend using an immersion blender or food processor. Then add in oil, making sure it sits on top of all other ingredients. Slowly increase the speed of the blender until a thick aioli is created.
