Our friends Joan and Kyle at Field Notes NY have been experimenting with savory maple dishes. Kyle suggest pairing this aioli with roasted root vegetables or on a sandwich.
Combine garlic, maple syrup, vinegar, hot sauce and salt and blend using an immersion blender or food processor. Then add in oil, making sure it sits on top of all other ingredients. Slowly increase the speed of the blender until a thick aioli is created.
