Joan's Maple Glazed Pork Belly Bao Buns


Our friends Joan and Kyle at Field Notes NY have been experimenting with savory maple dishes. Check out the recipe below for their maple take on bao buns!
  • 1/4 cup oil
  • 2 1/2 cups grated yellow onion
  • 1 1/2 crushed garlic cloves
  • 3.3 lbs of pork belly, skin on, cut into 1.5 inch cubes
  • 1 cup rice vinegar
  • 1/2 cup soy sauce
  • 1/4 cup fish sauce
  • 5 tablespoon maple sugar¬†
  • 1/2 cup dark maple syrup
  • 2 star anise
  • 1/4 teaspoon black peppercorn
  • 3 bay leaves
  • 12 bao buns (can be found in the freezer section of an Asian grocery)


Sautee onion and garlic over low heat until tender, about 7-10 minutes. Add remaining ingredients (besides bao buns) along with onion mixture to pressure cooker. Pressure cook at a gauge of 15 pst/high pressure for 45 minutes. Start timing when full pressure is reached. Let cooker cool when done. Lift meat from the cooking liquid with a slotted spoon and put into a frying pan. Strain cooking liquid into a pot. Transfer one cup of the cooking liquid into the pan with pork belly and simmer over medium heat, gently turning and basting until it is glazed, about 12-15 minutes. Serve on bao buns and enjoy!
