We love curling up on a rainy afternoon with a cup of tea and a slice of warm banana maple bread. It's the perfect way to use overripe bananas and requires just a handful of ingredients!
⅓ cup vegetable oil
½ cup maple syrup (we used dark)
2 mashed ripe bananas
¼ cup milk of choice or water (we used almond milk)
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon
1 ¾ cups whole wheat flour
Optional: nuts, raisins, or chocolate chips.
Preheat oven to 325 degrees; grease a 9×5-inch loaf pan. In a large bowl, beat oil and honey together; add the eggs and beat. Whisk in the mashed bananas and milk. Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Stir in flour, just until combined. Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon. Bake for 55 to 60 minutes; let bread cool in the loaf pan for at least 10 minutes.
